A healthy lentil soup might not sound like much, but I promise you, this simple and healthy dish is – delicious. I know people always say that when they give you a recipe, but this time it is for real. And it contains no milk, eggs or nuts, which is also why it’s such a gem.
Even though lentil always has a vege subtone, this one really gives you a kind of a meaty inner satisfaction. If you’re vegetarian or vegan, don’t let this sentence discourage you from trying it. You try imitating meat all the time anyway. But this is not one of those recipes that try to be what it isn’t.
It actually is just a healthy lentil dish, nothing more and most of all nothing less.
This soup is great for workdays, because it is quick to cook and very nutritious. Lentils are very rich in fiber and protein, so they kind of substitute meat as well as some veggies. I warn you this was a sales pitch, and that nothing but meat and veggies can really substitute meat and veggies.
As I have already said, this is a great soup that no one will ever think, that some additional thought has been put to it. After all, it is 100% dairy, egg and nut free.
Ingredients (for two people):
- 1 sliced onion
- 2 smaller sliced carrots
- 150g red lentils
- 1/2 glass white wine
- 1 L Stock (chicken, beef, vegetable… if you have choice, choose in this order)
- 3 Garlic cloves
- 1/2TSP Cumin
- salt & pepper
- Olive oil
I said this will be a workday recipe, so expect a simple and straightforward one. It might surprise you, however, HOW simple this is.
As you might have guessed already, good strong soups start with hot olive oil. So, take out your pan and heat up some oil. When hot, but not too hot, throw in the onions and wait until it starts smelling very nice. One important step – DONE!
Next step, and with the second one we are rapidly approaching the last one, add carrots, garlic and lentils. Wait for a few minutes and add half a glass of white wine and let the alcohol evaporate. Pour in the stock, add salt, pepper and cumin and simmer for half an hour or until the lentils are cooked. Blend. Done!
I bet you didn’t think a healthy lentil soup would be this simple.
For members of your family that can eat dairy, add a nice big spoon of Greek yogurt to the plate. It will deepen the flavor and make the soup so rich it will almost be naughty. Decorate with something green and seasonal like parsley and enjoy your meal.
