Sweet potato brownies recipeI can almost not believe my baby will be one year old in just a month. The time flew by so fast and we are all so excited to give her a birthday party. Because of all the allergies she is suffering from, it is hard to come up with food even she can enjoy for her birthday, but sweet potato brownies can ce made into a cake with just a little imagination.

All the limitations left me with no other choice than to investigate. And hopefully come up with a prototype of something we could use as a “cake”.

Because a birthday cake is an essential part of a birthday party, I was really trying to find something that was tasty, not too dry and free of all food that she can’t have. And I tell you it was quite challenging. Situation would be much easier if she could have regular gluten free flour, but she is allergic to wheat in general, and basically all cereals except rice and millet. I once tried to bake bread just from millet, to find out if it is a viable option for our girl, and it was a total disaster. I’m not really sure why but it was bitter and not tasty at all.

So I decided to use rice flour for cake and combine it with something to add moisture and also give some kind of structure. On the last doctor’s appointment he told me that we should eliminate coconut as well, so coconut oil was out too. I am not really sure why, because it is actually not a nut, but just to stay on the safe side, we took the advice.

Sweet potato brownies can be a good cake base

I somehow came across sweet potato brownies on a web forum. It wouldn’t work “out of the box”, so I replaced all nuts and serials with rice flour, coconut oil with simple olive oil and it worked pretty good. It is definitely not a regular cake base with a lot of butter, cream and eggs but it is deep and rich and chocolatty, sweet and could make a pretty decent birthday cake. With some decoration and maybe some fruits. If you don’t have problems with that much food you can definitely add half of rice flower and half of almond and use coconut oil, but I think even without these ingredients it is nice to bake something a bit different from time to time.

Okay, let’s start.

Ingredients for sweet potato brownies (makes a small batch, it was, after all, a test drive)

  • 2 medium sized sweet potatoes
  • 200 g rice flour
  • 3 table spoons brown sugar
  • 3 table spoons unsweetened cocoa powder
  • a pinch of salt
  • 2 table spoons olive oil

Procedure

Preheat oven to 180°C. Then peel, dice and cook sweet potatoes until they are really soft and mushy. Let them to cool down just a little bit.

In one mixing bowl mix rice flour, cocoa powder, salt and sugar. In another mixing bowl squish sweet potatoes. You can put it in the food processor if you have it, and add 2 table spoons of olive oil.

Now it is time to combine both bowls together. Because sweet potato is quite wet you really do not have to add more liquids. Mix really good.

Oil the baking tin with olive oil or put the baking paper in the baking tin. I like to wet if first and then put in into the tin. I used small baking tin 22cm x 9cm. Pu the mixture inside and flatten its surface.

Bake sweet potato brownies for 20-25 minutes. Done.

I believe I came up with a pretty darn good and viable option for a desert. The test batch of sweet potato brownies was a total success and the little one loved it. She likes almost everything we give her, but this… she just LOVED.

For my baby girl’s birthday I am going to use this recipe as a cake base, bake two batches it in a cake tin, (it is important the desert looks like a cake if you are one year old) and I am going to put some sort of jam and fresh fruit between. Fingers crossed it is going to be good.
