Yes, we still have some fresh vegetables in our garden. And since beets are as much in season as in fashion, I wanted to try another dish with them.  So, what to do with fresh beets? I decided to challenge myself and make a dessert. It came out nothing short of great, and here I give you – the beetroot cocoa muffins!

It sounds and reads simple. Beetroots have a sweet taste and strong red colour. If this was all someone told you about beets, you would think they are a fruit of some kind. But as I started thinking, the challenge proved quite hard. Maybe it was because of the texture, or the absence of acidity.

If you take a test taste of a beetroot, you will know exactly what I mean. Despite the sweetness and colour, the fact that you are dealing with a vegetable and not fruit, is totally obvious. And, you notice from the first moment, that possibilities of making a dessert just shrunk a little.

A “Fruity and fresh” dessert seemed out of the option. A grey day outside, with premature prospects of winter also helped me making my decision to create a deep and strong dessert. Think cocoa, chocolate… But, of course, I couldn’t use mik, eggs or nuts because of my daughters allergies.

So, what to do with fresh beets? Muffins!!

Let’s get one thing straight right away: even people with the sharpest of tastes will have problems identifying the secret ingredient of this recipe. This recipe will not yield some weird experimental muffins people seem to be making these days.

The taste of the beet root is gentle, the colour is dark, so when put into muffins, it will just make them friggin tender, and that makes these muffins worth a try.

Ingredients

  • 200 g fresh beet roots
  • 1 dl olive oil
  • 200 g flour
  • 100 g sugar (I used demerara sugar because it tastes richer)
  • 3 tablespoons cocoa powder
  • 1/2 tea spoon baking powder
  • 2 dl coconut milk
  • salt

Instructions

First thing’s first: Peel the roots, slice them into manageable pieces and cook in hot water for 20 minutes. Once they are cooked, wait a little so they chill enough for you to work with them.

Preheat the oven to 200°C.

If you can hold them, you can grate them! Grate the cooked beetroots (on the big pattern side of the grater, of course) and put into a big bowl.

From here on, the recipe gets just too simple. Combine all the ingredients on the list and mix well. Make sure you sifted the flour for extra tenderness. Now this recipe gets like every other muffin recipe you ever read. Using a table spoon /this batter/dough isn’t veryrunny), place the batter into muffin tray with paper cups. Fill each cup to 3/4 of its height.

Bake them for 25 minutes, remove from the tray and bake another batch.
