I am posting this a bit late, but it was a hell of a finish of the 2016. Good food and good company all the time. But even so, there were some quiet, stay at home evenings. And on such evenings, a nice dessert or something to bite on comes in handy. Again, not my healthiest recipe ever, but at least it is dairy, egg and nut free. It was my first time making cookies without basic ingredients like eggs and dairy… I admit, it proved more difficult than I imagined, but I made it. The chocolate chips I used were from my own homemade chocolate, because trusting commercial chocolateurs with your loved ones’ allergies just doesn’t seem right. This is my chocolate chip cookie recipe without eggs.

What are the basic ingredients of “normal” cookie dough? By normal, I mean one that contains mos of the allergens the world of food has to offer… Flour, butter, sugar and eggs.  Can you count how many of these one can use if he or she needs to avoid dairy and eggs? Yes. You ave to do magic with only flour and sugar. Does not sound viable, because it is not.

But then again, there are many choices of fat, there is at least one egg alternative, and having homemade chocolate of highest possible quality definitely helps too. So yes, chocolate chip cookies without eggs and dairy exist.

Okay, eggs aren’t really a basic cookie ingredient and this recipe works just fine without them. I used aquafaba. I know, I use it a lot lately, but it is just so nice to have something that adds a bit of fluff to otherwise dense egg free foods.

I don’t like using baking powder and try to avoid it whenever I can. In this recipe, I didn’t use any. It makes my mouth feel funny. I don’t know it is just baking powders around here, but other people I know report of the same. It is true, it makes food fluffier, sometimes even better looking. But if you place taste first, you should forget about it.

Thinking back, most my recipes are not about including more and more fancy ingredients, but avoiding them. I must admit it became fun after the initial period of crying about having no options.

Most people like cookies. They have rich taste, they look good and fill the house with the most inviting smell when in the oven. Avoiding the crucial ingredients doesn’t change any of these properties.

Ingredients

  • 100 g white all purpose flour
  • 100 g spelt flour
  • chocolate chips (best if chocolate is homemade)
  • 100 g sugar
  • 3 big scoops of aquafaba snow
  • a big pinch of salt
  • vanilla seeds
  • 100 g coconut oil
  • 30 g olive oil

Instructions

I know it is funny reading an ingredient list where liquids are expressed in grams, but when it is as simple as this chocolate chip cookie recipe without eggs, it can come it handy. You just need to place your big bowl onto a kitchen scale, and start adding ingredients, pressing that magic “tare” button after each one.

What I’m learning lately is, that you rarely need the raw sweetness of white, refined sugars, but can make complex flavors of darker unrefined varieties work in your favour.

Now that I basically covered most of the procedure, I owe you the long, official version:

Preheat oven to 180°C.

In a bowl, combine all the ingredients but the chocolate and aquafaba and and mix them well.

Add aquafaba and gently mix again.

When combined, add chocolate and mix yet again.

Place parchment paper on a baking tin. Form balls the size of a golf ball and place them 7-8cm apart.

Put the baking tin into the oven and bake for 25-30 minutes.

Done! You can see that this chocolate chip cookie recipe without eggs really is simple, and even though it cuts out some of the basic cookie ingredients, still produces tasty and good looking cookies.

Notes

When dealing with allergies, it is best to use homemade chocolate. That way you can know somewhat more for sure what they are made of. Nuts and dairy find their way into commercial chocolates all the time.

Go crazy with different sugars! Not that I'm advocating excessive use of sugar, I just find it right in the company of wines, chocolate and coffee. So many delightful options!
