Sunday lunch doesn’t have to take the whole morning to prepare. Even though it is some people’s idea that they need to spend a lot of time in the kitchen, I find it is not at all necessary. Yes, this dish is a casserole. And yes it can serve as a one course meal. So what! Sundays are for spending time with your family, going out in the nature, enjoy the sun (or rain)… Don’t get me wrong, cooking is a great pastime, I just think it isn’t worth wasting a sunny day over it. These oven baked chicken drumsticks make a great family lunch without the sacrifice of quality time.

I love slow cooked or slow baked meals.  Not only because they are simple to make and don’t take a lot of time. The main reason why I love cooking with the ol’ cast iron is the taste. I don’t think there is a cooking technique as fool proof and as efficient as slow cooking.

Most of the time, you just need to slice all the ingredients, throw them all into the single pot, add some liquid, put it into the oven and forget about it for a little while.

The recipe uses no hard to get ingredients. In fact, they are the humblest bunch you can think of, which can be quite comforting some times. It is not everyday I like to experiment in the kitchen, and for those kind of days, this oven baked chicken drumsticks recipe rocks.

Dairy free, egg free and nut free… like always

This is, like always, a dairy free, egg free and nut free recipe. Very easy groups to avoid when slow cooking, because none of the three is a very common ingredient when cooking like this.

Ingredients

  • 4 chicken drumsticks
  • 15 small potatoes or 5-6 big ones
  • 3 medium sized onions
  • 4 carrots
  • sweet paprika
  • 2 lemons
  • dried garlic powder
  • salt and pepper

Instructions

Preheat oven to 170°C.

Peel potaoes and then slice them into medium sized pieces. If the potatoes are fairly small, you can just slice them in half.

Then prepare other vegetables. Peel and slice onions and carrots. No need to slice them too thinly, because they will cook for quite some time, and you don’t need to worry about your ingredients ending up raw. In fact, the pieces should be big chunks.

Season the potatoes, onions and carrots with some dried garlic, a tea spoon of sweet paprika, salt and pepper. Drizzle with olive oil and juice of one lemon, mix well, and spread everything on the bottom of your cast iron pot.

Cover the base of the cast iron pot.

Season the chicken drumsticks with salt, pepper, paprika, and juice of one lemon. I like to season chicken pretty heavily, especially when using whole pieces. The thicker the meat, the less chance of over seasoning.

Place the chicken drumsticks on top of the potatoes with vegetables. Add 100 ml of water, just to keep the cooking environment moist and food tender. Do not pour the water onto the meat, or you will rinse down the seasonings.

Cover and place into the oven.

Bake for 1 hour, then increase the heat to 190°C for additional 30 minutes.

Uncover and inspect the colour of the meat. After an hour and a half, it is definitely done, it just might look cooked instead of baked sometimes. That’s why you need to turn on the grill and leave the dish uncovered in the oven for another 10 minutes.

Done!
