Meatballs are so many people’s favourite it’d be a shame not to investigate them.  The question was how to make them into a quick and tasty dish. Some people make them a big fuss, but there is no need for it. Making them dairy free isn’t exactly a big deal, but most meatball recipes that claim to be very good (and they are) use Parmesan cheese in the meatballs and sometimes even cream, to make the sauce richer. Well in this one, there will be none of those flavor lifters. If you didn’t end up here searching for the “nasty” meatball variety, don’t run away just yet! I promise you will like it. This egg free, nut free and dairy free meatballs recipe is probably the simplest one you will find without sacrificing the deliciousness.

Dairy free meatballs are easy, but…

There is, again, a small setback, if you want to make these meatballs totally dairy free. You will need some homemade bread. Or a bought one, but I have yet to find a bakery I can trust that they use no dairy products. But baking great homemade bread is probably one of the most rewarding skills you can learn. And it gives you total control over ingredients. Very useful if you or someone you love suffers from allergies. You can get going with this easy and basic bread recipe, but in the near future, I am getting ready to post a more advanced one.

If you want to be sure you’re cooking dairy free, you have to make your own bread.
Even when bread is one or two days old, you can blend it into great breadcrumbs.

Other ingredients are as simple as possible. I am almost embarrassed to admit they are predictable. But on the other hand, I doubt you ended up here looking for meatballs with a twist. Just in case you did, you can check my Best Meatballs Recipe with tomato coconut sauce.

Enough empty words, let’s see how it is done!

Ingredients

  • 500 g minced meat (beef or beef/pork mix)
  • 2 onion
  • 2 cloves garlic
  • 1 an of diced tomatoes
  • dried basil
  • salt
  • pepper
  • 150 ml water
  • breadcrumbs
  • olive oil

Instructions

First prepare the meat for the dairy free meatballs: chop one onion into small pieces and bring your pan to medium-high heat. Pour in some olive oil and onion. Cook for 5 minutes. You can add some salt to speed up the cooking process.

Blend two pieces of old homemade bread to make breadcrumbs. It is important the bread isn’t fresh or you will blend it into lumps instead of crumbs.

Combine minced meat, breadcrumbs and onion. Add some salt and pepper and mix well. Form balls, a little bigger than golf balls.

The balls are a simple mixture of meat, onions and breadcrumbs. Together with some salt and pepper, of course.

Reheat the pan you used to cook the onion, add some oil and brown the meatballs from all sides. If you are making a lot, make sure you don’t add them all at once, or the pan might cool too much too quickly, and the meat will start cooking instead of browning, not to mention it will be very hard to turn the balls.

Nicely brown all around. Time to make the sauce.

Once the meatballs are brown on all sides, add the second onion, this one chopped into bigger pieces. Stir and cook together with meatballs for a minute, and then add chopped garlic, dried basil and tomatoes. Season with salt and pepper.

When the sauce starts to simmer, cover and cook for 10-15 minutes, depending on the size of the meatballs.

Sacrifice the biggest ball and slice it in half to check for doneness. If it’s done, the dairy free meatballs are ready to be served. Serve with rice, pasta or mashed potatoes.
