This is one of the recipes that saved me so many times already. Whenever I go out with my daughter for more than two hours, we need to bring snacks with us. It is hard to get food for her at restaurants, so I learned to make quick and delicious snacks. Maybe pancakes aren’t your first thought when you think of a lunchbox, but they actually work quite well. I admit, although they are dairy, egg and nut free, they are so delicious I steal one or two from the little one whenever I can without making her angry.  This healthy banana pancake recipe is great for people with dairy, egg and/or nut allergies, but also great for omnivores.

Another great thing about this one is its simplicity and short preparation time. Don’t expect the texture and fluffiness of regular pancakes with eggs and milk, but also don’t expect nothing less. They come out delicious, even without beating the egg whites separately and then obsessing about incorporating the second part of the batter without letting too many air bubbles escape.

With this healthy banana pancake recipe, you will produce some very satisfying pancakes in a matter of minutes. You will need only one kitchen power tool – a hand blender, and absolutely no kitchen skills or difficult techniques. So even if you only have little time to make your kid a healthy snack, don’t give him a store-bought and make these instead. With a spoon of honey, this is the real deal, AND you know exactly what your child consumes.

It means a lot if you can write down all the ingredients without using digits and big words. Not something you can say for off-the-shelf  sugary and salty stuff people give to their kids every day.

This recipe yields about 5 small pancakes which is just enough for a snack or two of a toddler. Pour a spoon of honey or agave over it, and they go crazy over them! At least my daughter goes. Just remember not to give your children too much sugar. Honey and agave are, after all, still mainly sugars.

This is a two step healthy banana pancake recipe, a REALLY stupid simple one, and I’m not even apologising. That’s because I know you will appreciate it. Everyone who ever needed to make a snack for a toddler while preparing for going out, knows the situation can get hectic. And not having to cook “properly” can save a lot of time and nerves.

Ingredients (for 5 pancakes, enough for one toddler)

  • 1 banana
  • 1,5 dl water
  • 3 table spoons flour
  • cinnamon
  • pinch of salt
  • olive oil

Instructions

Preheat a non-stick pan.

Put all the ingredients except olive oil into a blender and blend the sh** out of them. Let rest for a minute or two and wait for the pan to get hot.

Add olive oil to the pan.

Start pouring pancakes. The bigger the pan, the less time it will take you. Make three or four at a time, depending on the size of your pan.

Flip after two to three minutes, when they get nicely brown, and cook another two or three minutes.

Serve with some fruit and a spoon of honey.

Batter is ready in a matter of seconds. Literally.
If possible, cook more than one pancake at a time. It will save you a lot of time.
Turn after 2 or 3 minutes. When the pancake looks like the one in the next picture.
